Collins Farms is an ode to the owner Sophie Gianaris’s grandparent’s farm that has been in their family for decades. The farm, which grows corn and soybeans and is home to cows and horses, is where her mother grew up and where she learned an appreciation for a healthy diet. Collins Farms was founded in the Summer of 2021 in Edwardsville, IL. Now here at Parkside Café, Collins Farms brings a gourmet experience that feels familiar. Using her grandfather’s saying, “Get your Greens!” Collins Farms is ready to share a little bit of home with our community, especially through their salads and baked goods. Collins Farms at Parkside Café is located at Schnuck Pavilion serving salads, paninis, coffee, smoothies, and desserts! Collins Farms at Parkside Cafe proudly serves Park Avenue Coffee.
